Warm Cabbage Salad

Cabbage is rich in vitamin A, vitamin C, it is a great source of fiber and sinigrin, which helps in cancer prevention. Cabbage, especially steamed cabbage has some special cholesterol-lowering benefits too.

This salad will warm you up with its lovely color and autamnal/winterly taste.


Warm Cabbage Salad

serves 4

half of a red cabbage

1 avocado

1 pear

3 scallions

1 garlic clove

large handful of walnuts

sunflower seeds

1 tsp coconut oil

1 lime

1 tbsp extra virgin olive oil

2 tbsp tahini

salt, pepper

1. Heat the coconut oil in a large skillet. Shred the cabbage very thinly using a knife or a mandolin, chop the garlic into small pieces and toss them in the skillet. Stir and cook for 3-4 minutes, so the cabbage softens up a bit.

2. Roast the walnuts, cut the avocado and pear into small cubes, finely chop the scallions and mix everything together with the cabbage in a large bowl.

3. For the dressing mix together a juice of a lime, some extra virgin olive oil, tahini, salt and pepper. Pour the dressing on, mix well and sprinkle some sunflower seeds or feta cheese on the top. Enjoy!
